
As requested, I will now share my Potato Salad Recipe that I invented a few years ago:
4 lbs. Potatoes (peeled, cubed, boiled, drained, set aside. Boil with a few Tb of sea salt if you like flavor as much as I do)
6 eggs (boiled, peeled, chopped into chunks and set aside)
In a separate bowl combine the following:
1 Cup Salad Dressing or Mayo
3 Tb. DILL relish (not SWEET--that is sick)
3 Tb. Mustard
1 tsp. Salt
1 tsp. Celery Seed
1/2 tsp. Pepper
In a large bowl combine the potatoes, eggs, and dressing mixture. Refrigerate and enjoy! Oh, by the way, if you think it looks too plain you can also add pimentos. Chancho likes that. You will have a splash of red from the few little peppers that are in the relish, but otherwise it might look a bit bland. But trust me, it's tasty.

I'm excited to try your potato salad. I'm glad you included in your recipe that sweet dill relish is sick- I second that. Also, eggs are a must! I think I am going to enjoy this salad very much. Thanks! I also like your potato salad model! Very Cute!
Well, aren't you just the Martha Stewart of the blogger world! Lookin' tasty indeed!
However, I have a slight problem. You see, for the life of me I can not boil eggs. If a recipe calls for hard boiled eggs, I'm toast. They never turn out - always brown or runny. And my kids wonder why we never dye eggs at Easter. I've even used the Betty Crocker cookbook to tell me how and for all the eggs in the world, I can't do it.
So pity me the fool who will never be able to enjoy your Fabby-Plabby Salad!
Sigh.
This is almost SPOOKY because I was only JUST now waling down stairs thinking, "Hmmm, what do I want to eat? I know, I want potato salad . . . but I don't have potato salad. Hmm, I wonder about that recipe Shan mentioned. I wonder if its really easy and if I should actually get it from her and consider making it." THEN THIS POST 5 MINS LATER!!!
Now I want it this second, but I have no dill relish or celery seed and what about 4 lbs of potato salad all along. Lonely lonely, why won't someone share it with me!! Last time our cousins came for dinner I used it as a chance to make all the things I love that no one here will eat like these amazing baked beans and funeral potatos, etc. If only someone was coming to share tonight.
Jana, I read that you bring them to a boil, turn the heat off and put the lid on for 17 mins. Then put them in cold water so the iron (now this is my biochemistry days) moves toward the shell instead of towards the middle where it combines with the sulfur in the yolk creating iron sulfide which is just fine and dandy but does make it look greenish or brownish around the yolk. Not that you'll try to boil the now anyway since all you heard was "cow stomach"
Funny, as I read your title I assumed everyone seriouslly knows that potatoes are plabbys, only just now did I realize some don't. Well everyone, they are plabbys -- ever since my dad called them that in confusion at about age 2 or 4.
Yay!!! I have always wanted a recipe that I knew was good. I love potato salad but have always been afraid to try it for fear of it being to mayo-ish, or dry. I cannot wait to try it! Did you get my email a while ago? Did you still want to get together? I am off to Vegas in a week so let me know!
